Is there a definitive explanation of the various AIs?
I can't seem to find anything that explains the characteristics of the available AI types (Hawk, Bubble, etc.)

You don't find anything, because there are no such descriptions. Seems you need to walk the same way like all others before... find out during play.
A few hints though
- Easy bots: Move randomly only
- Grabby: Like his name indicates, trying to get what he can get asap
- Holdem: Also like his name indicates, trying to defend what he possesses. He never builds knights, but at some point will attack with pawns only.
- Hawk: Has some intelligence to conquer and defend quite reasonably. Attracted by high-value spots.
- Polymath: Similar to Hawk, but does calculations regarding battle outcomes which has influence on his attack/defend behaviour.
